Coconut Ice-Cream

Ingredients
800ml Mrs Tran’s Kitchen Coconut Cream (4 packs)
1/2 Cup Sugar
1 Tsp Vanilla Extract
1 Tbsp Lime Juice (Optional)
Pinch of Salt
Optional: Garnish with fresh mint leaves or toasted coconut flakes for extra flavour and texture.
Cooking Instructions
- In a bowl, whisk together coconut cream, sugar, salt, and vanilla extract until the sugar is completely dissolved. If using lime juice, stir it into the mixture.
- Cover the bowl and place it in the refrigerator for at least 4 hours, or until thoroughly chilled.
- Once the mixture is chilled, pour into a shallow dish or baking pan. Place the pan in the freezer and let it freeze for about 4-6 hours, or until completely solid.
- Once frozen, remove the pan from the freezer and let it sit at room temperature for about 5-10 minutes to slightly softened. Use a spoon or fork to break the frozen mixture into chunks.
- Transfer the chunks into a blender or food processor. Blend the frozen chunks until smooth and creamy. You may need to stop and scrape down the sides of the blender a few times to ensure even blending.
- Transfer mixture into a freezer suitable container and return to freezer to store until ready to serve.
