Made with coconut cream, a hint of vanilla, and just the right amount of sweetness, it’s a refreshing dessert perfect for any time you need a little island escape.

Ingredients

Serves 4

800ml Mrs Tran’s Kitchen Coconut Cream (4 packs)

1/2 Cup Sugar

1 Tsp Vanilla Extract

1 Tbsp Lime Juice (Optional)

Pinch of Salt

Optional: Garnish with fresh mint leaves or toasted coconut flakes for extra flavour and texture.

Cooking Instructions

  1. In a bowl, whisk together coconut cream, sugar, salt, and vanilla extract until the sugar is completely dissolved. If using lime juice, stir it into the mixture.
  2. Cover the bowl and place it in the refrigerator for at least 4 hours, or until thoroughly chilled.
  3. Once the mixture is chilled, pour into a shallow dish or baking pan. Place the pan in the freezer and let it freeze for about 4-6 hours, or until completely solid.
  4. Once frozen, remove the pan from the freezer and let it sit at room temperature for about 5-10 minutes to slightly softened. Use a spoon or fork to break the frozen mixture into chunks.
  5. Transfer the chunks into a blender or food processor. Blend the frozen chunks until smooth and creamy. You may need to stop and scrape down the sides of the blender a few times to ensure even blending.
  6. Transfer mixture into a freezer suitable container and return to freezer to store until ready to serve.
