Coconut Panna Cotta with Berry Coulis

Ingredients
400ml Mrs Tran’s Kitchen Coconut Cream (2 Tetra Paks)
¼ Cup sugar
2 Tsp gelatine powder
2 Tsp cold water
1 Tsp vanilla extract
Berry Coulis:
1 Cup fresh or frozen berries
2-3 Tbsp sugar (adjust to taste)
1 Tbsp lemon juice
Optional Toppings: Frozen mango, toasted coconut & almond flakes, mint leaves.
Vegan Option: Substitute gelatine powder with agar agar powder.
Cooking Instructions
- In a small bowl, soften gelatine in cold water. In a pot, heat coconut cream and sugar until hot.
- Dissolve softened gelatine into the hot coconut cream mixture, stir in vanilla extract. Remove from heat and allow to cool slightly.
- Pour mixture into glass moulds. Chill in the refrigerator for at least 4 hours until set.
- In a small saucepan, combine the berries, sugar, lemon juice, and water. Simmer over medium heat for 7-10 minutes until berries soften. Remove from heat and allow to cool.
- Serve chilled panna cotta topped with berries coulis, toasted coconut/almond flakes and mint leaves if desired.
Optional Topping: Substitute berry coulis with blended fresh/frozen mango.
