Smashed Cucumber Salad

Ingredients
2 Large Lebanese Cucumbers
4-5 Radishes
1-2 Tbsp Mrs Tran’s Kitchen Sate Chilli Oil
1 Tbsp Mrs Tran’s Kitchen Light Soy Sauce
1 Tbsp Rice Vinegar
2 Tsp Sesame oil
1 Tsp Sugar/Honey (optional, to taste)
1 Clove of Garlic, minced
Pinch of Salt
Optional Garnish: Fresh Coriander, Mrs Tran’s Kitchen Fried Shallots.
Cooking Instructions
- Smash the cucumbers with the flat side of a knife or mallet/rolling pin, then chop into bite-sized pieces. Smash or thinly slice radishes. Add cucumber and radishes into a large mixing bowl.
- In a small bowl, whisk together Mrs Tran’s Kitchen Sate Chilli Oil, Soy Sauce, rice vinegar, sesame oil, sugar/honey (if using), and minced garlic.
- Pour the dressing over the cucumbers and radishes. Toss well to coat evenly.
- Garnish with Mrs Tran’s Kitchen Fried Shallots and serve immediately. Enjoy!
