Peanut-Free Satay Tofu & Vegetable Stir-Fry

Ingredients

Serves 4

1 Cup Mrs Tran’s Kitchen Satay Sauce

1/2 Cup Mrs Tran’s Kitchen Coconut Cream 

1 Block firm tofu (approx 400g)

2 Tbsp Cooking oil

Choice of fresh/frozen veggies, suggested:

1 Carrot, julienned

1 Capsicum, sliced

1 Onion, sliced

1 Broccoli, cut into florets

150g Sugar snap peas or snow peas 

Optional Garnish: Sliced chilli, chopped spring onions, coriander, sesame seeds, fried shallot.

Cooking Instructions

  1. Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the sliced tofu and cook until lightly browned on all sides, about 2 minutes per side. Remove tofu and set aside.
  2. Heat remaining oil in wok, add all the vegetables and stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
  3. While the vegetables are cooking, mix the Mrs Tran’s Kitchen Satay Sauce and Coconut Cream in a small bowl until well combined.
  4. Once the vegetables are cooked to your liking, add cooked tofu and sauce mixture into the wok, Stir well to coat everything evenly.
  5. Cook for an additional 2-3 minutes, or until the sauce is heated through.
  6. Remove from heat and top with desired garnish. Serve hot with cooked rice or noodles and enjoy!
