Thai Pineapple Fried Rice

Ingredients
¼ Cup Mrs Tran’s Kitchen Pineapple Sweet Chilli Sauce
½ Cup Mrs Tran’s Kitchen Seafood Chilli Sauce
3 Cups cooked rice (preferably jasmine rice)
300g prawns, peeled and deveined.
4 Eggs, beaten
2 Cups chopped mixed vegetables (thawed if using frozen veggies)
2 Cups canned or fresh pineapple, diced
2 Garlic cloves, minced
4 Tbsp vegetable oil
Salt and pepper, to taste
Garnish Options: Chopped spring onions or coriander.
Cooking Instructions
- Heat oil in a large pan/wok over med-high heat and cook garlic for about 30 seconds.
- Add mixed veggies and prawns, stir-fry for 3-4 minutes until softened.
- Push the veggies and prawns to one side, pour in eggs and scramble until fully cooked. Add cooked rice and diced pineapple and mix well.
- Add Mrs Tran’s Kitchen Pineapple Sweet Chilli Sauce and Mrs Tran’s Kitchen Seafood Chilli Sauce, mix well and cook for 2-3mins until heated through.
- Season with salt and pepper to taste and top with desired garnishes before serving.
