Thai Pineapple Fried Rice

Ingredients

Serves 4

¼ Cup Mrs Tran’s Kitchen Pineapple Sweet Chilli Sauce

½ Cup Mrs Tran’s Kitchen Seafood Chilli Sauce

3 Cups cooked rice (preferably jasmine rice)

300g prawns, peeled and deveined.

4 Eggs, beaten

2 Cups chopped mixed vegetables (thawed if using frozen veggies)

2 Cups canned or fresh pineapple, diced

2 Garlic cloves, minced

4 Tbsp vegetable oil

Salt and pepper, to taste

Garnish Options: Chopped spring onions or coriander.

Cooking Instructions

  1. Heat oil in a large pan/wok over med-high heat and cook garlic for about 30 seconds.
  2. Add mixed veggies and prawns, stir-fry for 3-4 minutes until softened.
  3. Push the veggies and prawns to one side, pour in eggs and scramble until fully cooked. Add cooked rice and diced pineapple and mix well.
  4. Add Mrs Tran’s Kitchen Pineapple Sweet Chilli Sauce and Mrs Tran’s Kitchen Seafood Chilli Sauce, mix well and cook for 2-3mins until heated through.
  5. Season with salt and pepper to taste and top with desired garnishes before serving.
