Coconut Panna Cotta with Berry Coulis

Ingredients

Serves 4

400ml Mrs Tran’s Kitchen Coconut Cream (2 Tetra Paks)

¼ Cup sugar

2 Tsp gelatine powder

2 Tsp cold water

1 Tsp vanilla extract

Berry Coulis:

1 Cup fresh or frozen berries

2-3 Tbsp sugar (adjust to taste)

1 Tbsp lemon juice

Optional Toppings: Frozen mango, toasted coconut & almond flakes, mint leaves.

Vegan Option: Substitute gelatine powder with agar agar powder.

Cooking Instructions

  1. In a small bowl, soften gelatine in cold water. In a pot, heat coconut cream and sugar until hot.
  2. Dissolve softened gelatine into the hot coconut cream mixture, stir in vanilla extract. Remove from heat and allow to cool slightly.
  3. Pour mixture into glass moulds. Chill in the refrigerator for at least 4 hours until set.
  4. In a small saucepan, combine the berries, sugar, lemon juice, and water. Simmer over medium heat for 7-10 minutes until berries soften. Remove from heat and allow to cool.
  5. Serve chilled panna cotta topped with berries coulis, toasted coconut/almond flakes and mint leaves if desired.

Optional Topping: Substitute berry coulis with blended fresh/frozen mango.
