Peanut-Free Satay Tofu & Vegetable Stir-Fry

Ingredients
1 Cup Mrs Tran’s Kitchen Satay Sauce
1/2 Cup Mrs Tran’s Kitchen Coconut Cream
1 Block firm tofu (approx 400g)
2 Tbsp Cooking oil
Choice of fresh/frozen veggies, suggested:
1 Carrot, julienned
1 Capsicum, sliced
1 Onion, sliced
1 Broccoli, cut into florets
150g Sugar snap peas or snow peas
Optional Garnish: Sliced chilli, chopped spring onions, coriander, sesame seeds, fried shallot.
Cooking Instructions
- Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the sliced tofu and cook until lightly browned on all sides, about 2 minutes per side. Remove tofu and set aside.
- Heat remaining oil in wok, add all the vegetables and stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
- While the vegetables are cooking, mix the Mrs Tran’s Kitchen Satay Sauce and Coconut Cream in a small bowl until well combined.
- Once the vegetables are cooked to your liking, add cooked tofu and sauce mixture into the wok, Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes, or until the sauce is heated through.
- Remove from heat and top with desired garnish. Serve hot with cooked rice or noodles and enjoy!
